You just can’t beat a cuppa T and a biscuit. It is one of lifes sweet, simple pleasures.
Why is it so bladdy hard to find decent gluten free biscuits? I’ve had enough of crumbly digestives, I crave a damn good biscuit that has all the taste and texture but less of the pesky gluten. Y’know, the kinda biscuit you can dunk in your tea and it doesn’t crumble apart. #goals.
When whippin’ up new recipes, I usually end up chucking everything together and hoping for the best. These lemon and lime babies turned out pretty decent. I recommend!
Fancy giving them a whirl? You will need the following;
80g unsalted butter at room temp
75g caster sugar
1 free range egg, separated
100g ground almonds
100g gluten free plain flour
grated rind of 1 lemon and 1 lime
1-2 tablespoons of milk
granulated sugar for sprinkling
First things first, pre-heat your oven to 200/400 and lightly grease two baking trays. Measure your butter and sugar, plop them into a bowl and cream together until light ‘n’ fluffy.
Beat in the egg yolk, leave the white in a small glass – we’ll come to that later.
Pour in the almonds, sift in the flour, grate in the lemon and lime rind and mix together till all combined. If needed, pour in 1-2 tablespoons of milk.
Splodge the mixture between your baking trays and pop in the oven for 8-10 minutes.
After around 10 minutes, remove your biscuits and brush on the egg whites from earlier with some granulated sugar sprinkled on top and return to the oven for another 5 or so minutes. Once a lovely golden colour, remove from the oven and leave you cool (I NEVER leave to cool) life’s too short, innit?
