Nutella Swirl Banana Bread (GF)

Banana bread is my all time FAVE.

The simplest, most satisfying bake. Not too sweet, but just enough to tickle that sweet tooth. Perfect to gobble with a cuppa T for breaky, dress up with a thick layer of cream cheese frosting, or spoon half a pot of Nutella into, coz u know, why the bloomin’ ek not?

What you will need…

1 cup of GF self raising flour (or just normal, if you fancy)

1 cup ground almonds

3/4 tsp baking powder

1/2 tsp pink Himalayan salt.. Or any salt, I ain’t fussy

1/4 cup softened butter

1 cup soft brown sugar

2 free range eggs

2 ripe ‘nanas, mashed

1 tsp vanilla essence

1/3 cup oat milk (or what you have in the fridge)

4 big tbsp Nutella

Pre-heat your oven to 180C (gas mark 4) and prep your tin with some baking parchment, enough so you can gently lift your loaf of love out of there.

First up, combined your flour, almonds, baking powder and salt.

Grab another bowl and creaaaam up the butter and sugar so it is nice ‘n’ fluffy. Gradually crack in your eggs and keep beating as you go. Then spoon in the mashed ‘nana, milk, vanilla and combine.

Gradually add your flour mixture, combine and pop to one side.

In a separate bowl, scoop in your Nutella. Pop it in the microwave for a few moments so it is nice and melty. Grab a spoon and transfer half on the mix into the Nutella, marry ’em together.

Fill the tin with alternate mixtures, then do a figure of eight with a knife to create that nice marbled effect.

Now to bake! Set your timer for 40 mins, this may be enough or you might need 10 minutes more. Once your loaf is a little golden on top, she is ready!

Slice her up still warm, make a round of tea and if you fancy it, spread over a layer of Nutella. YOLO.
