Vegan Style French Toast


As a breakfast lover, I’m all about experimenting my morning grub. Stacks of banana pancakes, smashed avo on errythang, smoothies and french toast. Those hunks of soft sourdough soaked in deliciousness, fried in butter then doused in lashings of honey and berries is enough to make me weak at the knees.

You can’t beat it.


Recently I haven’t been all about the eggs. Not sure why, I’m just not enjoying the taste these days. I needed to find a way of making dreamy french toast with out em’, and I’m not yolking, it turned out pretty well.

I used a super simple combination of smashed banana, raspberries, almond milk, honey and cinnamon, it is glorious and relatively healthy!

You shall need the following:

1 banana

1 pack of raspberries

Almond milk (a few big glugs)

Honey (depending on your sweet tooth)

Cinnamon (a generous sprinkling)

Sough dough bread – or bread of choice, a loaf from Beyond Bread would be glorious

Butter or coconut oil for frying

Start by mashing your banana in a big dish (so you have enough room to soak your bread)


Then chuck in your raspberries.


Once all crushed together, glug in your almond milk.


Squeeze in your honey.



Sprinkle over your cinnamon and mix.


Give it a guuuuurd mix.


Slice your sourdough (two slices per person, ish)


Pop your bread in the mix for 5 mins, then flip sides for 5. Make sure the bread is fully covered and soaked in the goodness.


Gently head your butter/coconut oil in a pan on a low heat and pop your soaked bread in. Fry on each side for around 5 minutes each – you are aiming for a lovely pinky/golden colour (ahem a little burnt). Repeat until you have enough for your hungry pals/fam waiting for you at the table.

Chuck on a place with a sprinkling of icing sugar and a scattering of raspberries.


Look at that pile of warm, sweet and ooooh soooo comforting breakfast grub.
