Courgette Gluten Free Pizza

I know of very few people who dislike pizza. What’s not to love about warm, comforting circles of love piled high with anything and everything ya fancy?

The only slight hitch is most of the time they’re packed with gluten. Nat ideal. Well, I’ve come up with a healthy, green, gluten free and rather experimental alternative…

Courgettes seem to be pretty damn popular on the foodie scene recently. Everyone is banging on about coodles (courgette noodles) and Spiralizer sales are probably off the scale but these green fellows are pretty handy when it comes to gluten free gobbling. When made into either noodles or blitzed into a pizza base, courgettes are the perfect vehicle for flavour – and essentially that’s all we need.

Ok, so this ain’t Dominos, but I promise you – it is much kinder to your body and actually tastes pretty bloody good – I reckon you will like it.

For the base…

2 medium courgettes

1 small handful of parmesan cheese

A smidge of grated mozzarella (or any cheese you fancy!)

1 handful of ground almonds

1 egg

Salt

Pepper

Chilli Flakes

Mixed herbs

For the topping…

Tomato and basil pizza sauce (make your own or grab a jar!)

Green or red pesto

Jalapeños

Sun dried toms

Feta

Basil

… Chuck on anything else that tickles your pickle.

Firstly, pre heat your oven to 180C then wash then roughly chop up your courgettes, pop them into your blender and whiz until they look a little like this…

Scoop into a bowl and zap in the microwave for 1 minute. Turn out onto a clean tea towel.

pick up the sides of your towel, hold over the sink and twwiiiist! make sure you wring as much water out as possible.

Mix around in a bowl, with your cheeses, ground almonds, salt, pepper, chilli and ‘erbs.

Crack in your egg, mix till combined.

Then we’re ready to… Roll out into a pizza(ish) shape on some baking paper and pop in the oven for around 20 minutes.

Once your base is firm/springy to the touch and slightly browned, take out the oven and slap on your toppings.

Pile whatever toppings you fancy ontop, flick on your grill and leave to melt/ooze for around 5-10 minutes…

Voillaaa! Corr I wouldn’t mind a pizza that right now.
