I will never cease to love banana ice cream, ever since the wonderful Cassey introduced me to the stuff I’ve been hooked.
You will always find multiple nana’s in my freezer, this recipe is SO easy and tastes like a dream – pretty aPEELing right? I reckon I may even prefer it to proper, full o sugar ice cream (well maybe not quite) but it comes bloody close.
When I have some extra bits and bobs knocking about in my cupboards, I like to experiment and whizz up a little summin’ summin’.
Rain or shine (even if it’s -2 outside) I’m all about big bowls of ice creamy goodness, the sort of mmMmmMMMMHMMmmm inducing, finger lickin’, eye closingly (technical term) good grub. I like it even more when it’s good for yo’ boday.
Dates are always a winner when making things thick, soft and sweet from natural goodness.
Bananas are also packed with amazing things – ice cream makes you happy but popping ‘nanas into the scenario makes it proper legit as the serotonin in them is scientifically proven to make ya happy, so there!
Maple syrup is the best of all sweetening ingredients as it is full of antioxidants and minerals (the purer, the better) as opposed to the pure glucose syrup that tends to be the main ingredient of most shop brought honey and other sweeteners.
So overall, as well as tasting BLOODY LOVELY, this stuff will provide you with the energy and nutrients making a damn good desert.. preferably with an avo brownie to go with it. Sounds good?
Here’s what you need…
Ice cream –
2 Frozen Bananas
1 cup of Almond milk
10 pitted medajool dates (soak for a few hours)
1 cup cocoa powder
a few tbsp Maple syrup
Brownie batter –
1 cup nut butter (I went for peanut)
1/2 cup cocoa powder
1 tbsp maple syrup
Dark chocolate to pop on top (optional)
As usual, start by freezing yo’ nanas overnight so they are completely frozen and ready to be blitzed up into that lovely thick ice cream. As you are blitzing, glug in your almond milk, drop in the dates, cocoa powder and maple syrup. Continue blitzing till you have a lovely looking chocolatey paste.
Scoop into a bowl and pop in the freezer whilst you make your brownie batter.
Chuck all the ingredients (peanut butter, cocoa powder, maple syrup) into the blender and blitz till smooth.
Remove your ice cream from the freezer, scoop into two bowls, stir in your brownie batter, stick some chocolate in the top if ya fancy and voilllaaaaaa!
