Ok – I’m not gonna lie, this is weird one. Possibly too weird but I’m gonna go with it anyway because I promise they taste absolutely bladdy amazing.

Convinced… Almost?

Originally I wanted to make black bean brownies. I tried them at Vogue Fashion’s Night Out made by the lovely Hemsley sisters and have been raring to give em a go ever since. I’ve been back home on the Isle of Wight over the past few days and thought I’d give it a whirl, although it seems that tinned black beans are almost impossible to find, so I had to find an alternative.

I stood in front of the various tinned beans for what seemed like hours, then finally thought right, lets just make it up as I go along and I swiped a can of chickpeas of the shelf. I wasn’t sure quite how I was going to make it work but somehow I did…

As well as being gluten free, these babies are packed full of protein, iron, fibre, magnesium and vitamin B6 from the chickpeas, they also contain no butter or refined sugar and still manage to taste like the gooiest, most comforting blondies.

Fancy it?

Here’s what you need for around 9 small squares:

1 can of chickpeas

1/2 cup maple/agave syrup

1/2 cup peanut/almond butter

1 tsp vanilla extract

1 egg

1/2 tsp baking powder

Choc chips, or just break up and chuck in a chocolate bar of your choice!

Pre-heat the oven to about 170C

Chuck your chickpeas into the blender/magimix or whip out your hand whisk and ground em’ to a smooth paste.

Add in your maple syrup, mix.

Crack in your egg, mix.

Add in your nut butter, mix.

drizzle in your vanilla extract.

swirl in your baking powder then finally mix in your chocolate!

Splodge onto a baking tray and shove into the oven for around 15-20 minutes.

After you’ve twiddled your thumbs and had a cuppa T, check to see if the the top springs back when you press down slightly (your finger doesn’t sink in, basically) leave to cool for a few minutes then dig in!

Also – don’t tell whoever’s waiting to devour them what the main ingredient is, let them indulge then let them into the secret, it will blow their miiiind.
