Gluten Free Pesto Bread

It is week 3 of The Great Blogger Bake Off! I am actually posting on the right day this time!

Knowing it was bread this week, I had to get my creative juices running and rise up to the challenge (heheh). I usually steer clear from bread all together as the shop brought stuff ain’t great, it’s over priced and dry as the Sahara. I was in search of a moist, wholesome loaf that’s full of goodness and will give you that warm, fulfilled feeling rather than the grim gluten bloat.

It is simple, light and incredibly good for you – flax seed is packed full of omega 3, protein, iron, magnesium and calcium and ground almonds give you a big does of antioxidants, vitamin E, potassium, and oodles of other good stuff. I would HIGHLY recommend it if you are GF and fancy a warm slice of bread soak up butter alongside a cup of T in the mornin’

Here’s what you need:

1/2 cup Almonds

1 cup Ground flax seed

4 eggs

4 tbsp water

1/2 tsp baking soda

a few pinches of salt

Optional…

1 tbsp red or green pesto

a handful of sun dried tomatoes, chopped

a handful of olives (whatever colour you desire) chopped

pine nuts of scatter on top.

Here’s what you need to do…

Pre heat your oven to 200C/400F.

Start by crackin’ those eggs into a bowl and beating them all together, then add in your water.

Measure out the almonds,  flax seed, baking powder and salt and combine with your hands. Pour the wet and dry ingredients into a large bowl and mix together until you have a seedy lookin’ batter.

Lastly, chuck in your sun dried toms, olives and pesto and combine.

Shpoooon in your batter and chuck over some pine nuts. Pop in the oven for around 20-25 minutes…
