I know, POTATO in a brownie? Naaaah.
Ok, maybe I’ve gone a little mad but I bloomin’ adore these.
My avocado brownies , Nakd BB muffins and caramel bites went down a treat and ever since I have been on some crazed raw baking adventure, this time with one of my favourite varieties of potataaa. Plus, as a student you are required to make the most out of unexpected cupboard contents… This may be my weirdest so far.
Anyway, if you fancy shocking people with your peculiar culinary advertures, here’s how.
What you need:
2 medium-large sweet potataaas.
14 pitted dates
4 tbsp cocoa powder
3 tbsp pure maple syrup
1/2 cup ground almonds
1/2 cup dedicated coconut (grind into flour in ya magi mix if you have one)
How you do it:
Pre-heat your oven to 180C.
First up, put the dates in warm water to soften up – leave em for around 30 minutes. Whilst they’re having a soak, peel, chop and pop the sweet potatoes in the steamer so they become lovely and soft. If you don’t have a steamer, wack em in the microwave for 5 minutes then the oven for 5.
After the dates are soft and the potatoes are steamed, drain the dates and blitz until smooth. Then gradually lob in the potato until they form a lovely thick lookin’ paste.
Now just tip in the rest of your ingredients, the paste is incredibly thick – don’t worry about that! Spoon into a greased brownie tray and pop into the oven for around 20 minutes.
Do a dance.
When they are ready (skewer comes out clean) leave them to cool for a little while before slicing into squares and stacking up into a sexy lookin’ tower of dreams.
Slab onto a couple of plates, pop the kettle on and eat them whilst still warm and gooey.
No fear, you can’t taste the potato at all. They are perfectly soft, chocolately and sweet without any sugar, flour, butter or eggs. Crazy, huuuh?
