PANCAKE DAY

The day we’ve all been waiting for.

Shrove Tuesday: A whole day assigned to gobbling. My sorta tradition.

The day of the year to go wear the loosest garms you own (absolutely no waist belts) stock up on pancake stuff and anything that could possibly go on top. I’m talkin’ lemons, sugar, Nutella, strawberries, banana, maple syrup, bacon, whipped cream, blueberries, honey, salted caramel… you know, just a few bits n bobs.

The reason for this is that when the clock strikes 12 and you have just unbuttoned your jeans with a big satisfied grin, tradition has it that you cut your favourite thing out of your life for 40 days and 40 nights. Dayum. As per, I’m giving up chocolate (it really is the ultimate test).

Better not waste any time then! LETS GO.

I started my day with gluten and dairy free blueberry pancakes, if you fancy less faffin’ try out these.

You will need:

2 eggs at room temp.

4 tablespoons of oat flour (blend up some oats)

1.5 tablespoons of maple syrup or honey

1 tiny sprinkle of salt

¼ teaspoon of baking powder

½ teaspoon or more of vanilla extract.

2-4 tablespoons of warm water if you need it

A handfull or blueberries and raspberries

and 2 tablespoons of coconut oil or melted butter for frying!

First up, whisk your eggs, maple syrup and vanilla extract until double original volume, light and fluffy!

add the oat flour and baking powder and combine until a smooth batter.

heat the oil and scoop on your pancakes! Pop blueberries and raspberries in the top before you flip it.

In student houses, pancake day tends to be messier that the average. y’know, attempting things like this…
