Being a gluten free lass, despite being bladdy annoying, opens up a whole different world of recipes you would have never imagined in yo’ wildest dreams. Over the past few years of avoiding the stuff, I have stumbled across a brownie that tops em’ all. Forget the flour and butter, we’re using AVOCADO!

These are perfect for a little sweet nibble if you feel like you need something comforting and indulgent. Or if you want to impress some non-gluten free folk with your culinary madness…
Here’s what you need for 6:
1 large ripe avocado
1 free-range egg
70g brown sugar
70g ground almonds
40g coco powder
1/2 teaspoon baking powder
A handful of chocolate chunks, I used dark but I’m sure milk or white would taste dreamy.
Pre-heat your oven to 180C/350F.
Start by popping your avocados in a bowl or food processor and breaking em down until they create a smooth paste (finding lumps of avocado in your brownie might give away the secret). Add all other ingredients and stuuuur it up, after some elbow grease you should be left with a smooth, shiny batter. Stir in your chocolate chunks and dollop onto your tray.
Leave them in the oven for around 15-20 minutes. Start checking at 15 – if they are a tad too gooey, leave them for a couple more minutes, depending on the texture you’re going for (I like them gooey FO SHO.) Whip em’ out the oven and get stuck in!
